I’ve been trying to make better biryani at home, but I keep getting different results every time. Sometimes the rice and meat taste great, but the overall flavor feels flat. Other times, the spices are so strong that they cover everything else.

For those of you in the U.S. who make biryani at home, what biryani spices do you usually keep in your kitchen? Do you prefer buying a ready-made blend, or do you mix individual spices yourself?

I’m especially curious about the difference between homemade and store-bought spice blends. I usually see mixes that include things like cardamom, cinnamon, cloves, cumin, coriander, bay leaf, and sometimes star anise. But I’m never sure about the right balance.

Another thing I’m considering is using a spice mill to grind whole spices at home. Does freshly grinding spices actually make a noticeable difference in biryani, or is it mostly useful for people who cook Indian food regularly?

I’ve also noticed that the type of biryani matters. Hyderabadi-style biryani, for example, seems to use a different balance of aromatics than some restaurant-style versions I’ve tried. I’d love to hear what works for people cooking in a normal home kitchen rather than trying to recreate a restaurant recipe exactly.
